Ginger grows well in the tropical climate of Kerala and in the state’s fertile and rich soils. “Cochin Ginger”(NUGC) and “Calicut Ginger”(NUGK) are the two strains of Ginger produced in Kerala that have captured international markets. Cochin Ginger is a premium quality spice and is highly preferred due to its low fiber and high moisture content. It is this variety that gives Indian ginger its fame.
Ginger has many uses. In Europe and the Western countries, Ginger is a treasured preservative, spice and flavoring agent. Ginger may be used raw and fresh or dried or powdered and pureed or as oil extracted from the roots of this spice.The medicinal properties of Ginger have been appreciated from ancient times. It is believed to be an effective cure for cough and cold. The curative properties of Ginger are used in medicines for gastro­intestinal and carminative problems ailments. Ginger is believed to be an analgesic and a sedative. InIndia a large quantity of dried ginger is fed to mothers in the days immediately following baby birth to help healing the wounds of the womb. Ginger is used as a febrifuge and an antibacterial agent. Ginger ale is an effective remedy for travel sickness and nausea
